Glühwein is wine warmed with spice — cinnamon, cloves, nutmeg, orange peel, allspice, simmered slow until the kitchen smells like a Christmas market. Most recipes call for red. White works too, and it works well, if you pick the right bottle.
What makes a good white for Glühwein
You want sugar and acid. Sugar gives you the sweetness the spices need to lean into. Acid keeps that sweetness from turning flat. Skip Chardonnay — the butter fights the spice. Skip Sauvignon Blanc too — it turns sharp and thin once it's simmered.
